After thoroughly sweeping, you will want to create a cleaning solution of water and commercial cleaning product (something specifically designed for restaurant floors that won't leave a residue) to mop the floor with. Use a powerful hose to thoroughly rinse the floor, and then be sure to use a squeegee to remove all excess water. Wet floors are just as hazardous as dirty ones.
