The Purpose of Refrigeration


A refrigerator is used to keep foods at a cooler temperature in order to slow down the growth of bacteria. A freezer, however, is intended to completely stop the growth of bacteria. On average, commercial refrigeration operates between 36°F and 45°F. The United States Food and Drug Administration (FDA) mandates that refrigerated products must be kept at 41°F or lower.

Maintaining Proper Refrigeration Temperatures 


Commercial refrigeration takes time to stabilize to a set temperature, and bigger units take longer. Make sure to wait a full day after adjusting the temperature on a refrigeration unit before storing food in it. Once it's stabilized, it's important to keep it at the proper temperate, so be sure to check the thermostat regularly. Keep in mind that the temperature will rise when the equipment doors are open. In addition to that, the thermostats are typically located near the doors which can cause a false reading. If temperatures seem to be above normal, close the doors and wait 5-10 minutes and check it again.
