3 Tips for Keeping Your Commercial Deep Fryers Working Efficiently

One important piece of equipment you'll find in most restaurants, especially fast food ones, is the deep fryer. Maintaining your commercial deep fryers is crucial to the quality of your food, your kitchen efficiency and your profit margin. 1. Keep Fryers Extra Clean. 


Deep fryers are one of the hardest pieces of kitchen equipment to keep clean. Grease build-up will eventually become a fire hazard if it accumulates. Wipe down your fryer at least once a day. When cleaning, be sure to clean the entire machine, especially the areas down under the fryer tank. You should also clean the fryer baskets through the dishwasher every day. Don't put them back in the fryer until they are completely dry to avoid splattering. Depending on the amount of frying you do at your restaurant, be sure to deep clean the unit every 3-6 months.

2. Change Your Fryer Oil Regularly. 


If your oil is old, you will be able to taste it in the food. In addition, old oil will cause the food to brown faster than normal; therefore, the food may look cooked when its not actually done. If your oil is black and smoking, that's a definite sign that your oil needs to be changed. Check with the equipment manufacturer to determine the recommended oil change frequency. The heat at which you run your fryer, what you fry and the volume you produce will also influence how often you should change the oil.

3. Maintain the Fryer Temperature. 


Each time you change the oil, it's important to calibrate the unit to ensure the thermostat reading actual matches the temperature of the oil. To calibrate your fryer, set the unit's temperature to the desired temperature, heat the oil, and when it registers the desired temperature, immerse a digital thermometer to make sure the readings match. By doing so, you'll ensure you're fryer is working efficiently. You don't want to machine running too hot or too cold. Having the right temperature on your fryer is not only important for efficient operation, but also for safety reasons.
